Talk the toque: doff your hats to our Good Food Guide winners
ARRIVING in Australia as a British backpacker with several years in Michelin-starred restaurants under his belt, Mark Briggs landed first at Heron Island. He'd been inspired to cook by his pastry-chef grandmother, and worked in kitchens as a pub dishwasher before making his way into restaurants, such as that of London's Pierre Koffman. Briggs' apprenticeship involved ''hours of picking spinach and prepping mushrooms'', but he advises other young chefs to ''keep going, don't try to get there too quickly. Pace yourself.'' Making his way south, Briggs joined Vue de Monde in Carlton, working across several of Shannon Bennett's restaurants before opening The Sharing House for restaurateur Paul Mathis at South Wharf this year. Briggs impressed judges Alla Wolf-Tasker, Philippe Mouchel and Guy Grossi with an understanding of what it takes to make it in a changing business. But that's part of the appeal for Briggs, who says of being a chef, ''day to day, it's never the same''.
